Voyager Estate The Modern Cabernet Sauvignon 2020

Voyager Estate The Modern Cabernet Sauvignon is a certified organic Cabernet blend from Margaret River.

Three plots contribute to this vintage, all on gravel, all farmed organically, and the blend lands at 86 per cent Cabernet, 9 per cent Merlot and 5 per cent Petit Verdot. Hand-picked parcels fermented separately in open, static and concrete vessels with daily pump-overs. After pressing, the wine spent fourteen months in French oak and a further three in concrete, which softens the edges without adding wood flavour, before blending, filtration and bottling in October 2021. Growing conditions in 2020 were close to ideal: a warm, dry season that cooled in January, letting ripening proceed steadily.

Blackcurrant, mulberry and a graphite note, with tannins that are firm and neatly polished. Serve at 17-18 degrees after a short decant. Match it with a standing rib roast, lamb with rosemary, or a hard sheep's milk cheese.
