Voyager Estate The Modern Cabernet Sauvignon 2021

Voyager Estate The Modern Cabernet Sauvignon is a Margaret River Cabernet blend from two organic blocks.

Two clones, two characters. North Block 12 is planted to Houghton, which gives fruit at the darker end of the spectrum, while Weightmans Block 5 carries clone 125, prized for a lighter profile, perfume and delicate structure. Both sit on gravel and are farmed organically. The blend is 86 per cent Cabernet with 14 per cent Merlot. Each parcel came in late in March and fermented on its own across open vats and concrete with daily pump-overs. Warm conditions in 2021 gave powerful, concentrated fruit that needed balancing, so tannin management was the focus. Fourteen months in French oak and three in concrete followed.

Dark berry and violet, then a savoury middle and a long, finely structured close. Serve at 17 degrees, decanted if you have time. It goes with roast beef, lamb ribs, or mushrooms cooked hard in butter with thyme.
