Description
Weinbach's Alsace Sylvaner is made from old vines inside the Clos des Capucins, the walled monopole at the foot of the Schlossberg that surrounds the domaine.
Sylvaner has slipped down the Alsace pecking order over the past few decades, overtaken by Riesling and Pinot Gris and often relegated to high-yielding sites, which is why so little of it is taken seriously. Weinbach's version argues the other way. The fruit comes from old, biodynamically tended vines in the Clos des Capucins, the walled vineyard that has belonged to the estate since the Faller family bought it in 1898, and yields are held low. The grapes are gently pressed in whole clusters in pneumatic presses, then fermented with indigenous yeasts in old oak vats, a choice the domaine regards as part of the terroir itself and a contributor to depth and complexity. The wood is old enough to give no flavour of its own. This is the first shipment of the wine to Australia.
Ready on release and good for three or four years. Serve at 10-12°C with charcuterie, grilled trout or a plate of Munster.
