Weinbach Alsace Sylvaner comes from old, biodynamically farmed vines inside the Clos des Capucins, the walled vineyard that surrounds the estate house.
Sylvaner has slipped a long way down the Alsace pecking order in recent decades, displaced by Riesling and Pinot Gris, and it is now rarely given good ground. Domaine Weinbach, at Kaysersberg beneath the Schlossberg, is one of the exceptions. This wine is drawn from old vines within the Clos des Capucins, the former monastic clos around the house, farmed biodynamically and cropped low. The sandy, rocky soil there ripens early, which suits a variety that holds relatively high natural acidity. The fruit was pressed gently as whole clusters and fermented with indigenous yeasts in old oak vats, a vessel that builds texture without adding oak flavour. The result is a dry, taut Alsace white with rather more concentration and aromatic complexity than the variety’s reputation would lead you to expect.
Drinking now and over the next four to six years. Serve at 10-12°C with charcuterie, onion tart or grilled trout.
