Yalumba The Signature Cabernet Sauvignon & Shiraz 3L 2021

Yalumba The Signature Cabernet Sauvignon & Shiraz 3L is a big-bottle version of the classic Barossa blend, made for long cellaring and special gatherings.

Every vintage since 1962 has been named for a person who has contributed to the life of the business, whose signature is printed on the label. The wine unites Barossa Cabernet Sauvignon and Shiraz, matured in oak. 2021 was widely regarded as an outstanding season in South Australia, with mild conditions and even ripening, and this is a deep red wine of floral perfume, red liquorice, blackcurrant and dark cherry. It is refined and balanced, with generous dark cherry fruit merging into ironstone tannins and a long, lingering finish.

Stand it upright before opening, decant into a large vessel and serve at 17 to 18 degrees. A spit-roast lamb or a whole rib of beef is a fitting match. Large formats age slowly, so it will keep for decades.
