Antinori Cervaro della Sala IGT 1.5L MAGNUM 2023

Antinori Cervaro della Sala IGT is a barrel fermented Chardonnay from Castello della Sala in Umbria, and one of the wines that proved Italy could make white of genuine seriousness.

The Castello della Sala is a fourteenth century castle in the hills near Orvieto, and the estate around it has belonged to the Antinori family since 1940. Cervaro was first made in 1985, blending Chardonnay with a small proportion of Grechetto, the native Umbrian white that gives the wine its local accent. Fermentation takes place in French oak barriques, with malolactic conversion and an extended period on lees, a Burgundian approach that was close to unheard of in Italy at the time. It is bottled under the Umbria IGT designation rather than a DOC, and it has become a benchmark against which other Italian whites are measured.

Serve at around 12°C with white meats, richer fish or truffle dishes; a format that suits a wine which ages well for a decade and beyond.
