Description

Babo Pinot Grigio is a Friulian Pinot Gris given eight hours of skin contact in the press and eight months on lees.

Friuli, in the far north-east of Italy, has a long-standing reputation for the country's best white wines. Winemaker Justin Bubb points to the diurnal range as the key: very warm days in the growing season and cold nights allow a long, even ripening and preserve aromatics. This wine comes from a 30-year-old site at San Martino al Tagliamento, near Pordenone, at the base of the Alps, where the soils are a mix of clay and alpine gravel from alluvial deposits. Pinot Gris from Friuli tends to carry more flesh than examples from the Veneto or Trentino, a quality Bubb underlines by leaving the destemmed and crushed fruit in the press for around eight hours before pressing begins. Fermentation was in stainless steel, followed by eight months on lees.

Drink within three years of the harvest; serve at 10-12C with prosciutto, grilled white fish or a risotto with asparagus.
