Description
Bernard Defaix Chablis 1er Cru Montée de Tonnerre is made from purchased old-vine fruit in Chapelot, grown by the same family for twenty years.
Montée de Tonnerre is generally reckoned the finest Premier Cru in Chablis, sitting on the right bank immediately beside the Grand Cru slope and sharing much of its south-east aspect and Kimmeridgian marl. Chapelot makes up around twenty hectares of the vineyard and is the source here, from old vines. Unlike Côte de Léchet, which the domaine farms itself, this wine is made from bought fruit, though Didier Defaix has worked with the same grower for two decades and says the family works exactly as he does. The lieu-dit's most famous grower is Raveneau, with Moreau-Naudet and Billaud-Simon among others also holding vines. The Defaix style keeps oak in the background so the site's density and saline grip come through, and the wine is sealed under Diam.
Good now and better with five to eight years in bottle. Serve at 10-12°C with oysters, roast fish or chicken with butter and herbs.
