Description
Bernard Defaix Chablis Grand Cru Bougros comes from the top sector of the steepest of the seven Chablis grand cru climats.
Bougros occupies the north-western corner of the grand cru slope, below Preuses, with a south-easterly exposure and the steepest gradient of any Chablis grand cru. Jasper Morris likens the style to being smothered in a great big woolly jumper, big, fat, soft and round, a description that speaks to the texture the site gives; from the upper part of the vineyard, where this wine is grown, he notes that the classical minerality of Chablis is present as well. Domaine Bernard Defaix is based at Milly, best known for its holdings in the premier cru Côte de Léchet. This grand cru is fermented and aged in oak barrels with regular bâtonnage and bottled after eighteen months. It is sealed under Diam.
Give it three to eight years and it will keep longer; serve at 11–12°C with roast chicken, scallops or a creamy fish pie.
