Bernard Defaix Chablis Grand Cru Bougros 2024

Bernard Defaix Chablis Grand Cru Bougros comes from the steepest of the seven Chablis Grand Cru climats.

Bougros occupies the north-western corner of the Grand Cru slope, below Preuses, and has both a notable south-easterly exposure and the steepest gradient of any of the Chablis Grands Crus. Jasper Morris describes the style of the vineyard as being like a great woolly jumper, big, soft and round, which is a fair guide to the texture these wines carry compared with the leaner climats along the hill. The upper sector, from which this wine is drawn, is the part he singles out for showing the classical minerality of Chablis alongside that breadth. Domaine Bernard Defaix is based at the foot of the Léchet hill on the left bank and is best known for its work in Côte de Léchet, but the house approach translates well here: restrained handling, no obtrusive oak and bottling under Diam.

Approachable young but worth eight years or more. Serve at 10-12°C with lobster, roast chicken or a rich white fish.
