Bessin-Tremblay Chablis 1er Cru la Forêt has only been bottled separately since 2016, when Jean-Claude Bessin accepted that two adjoining parcels were making quite different wines.
La Forêt is a climat that sits within the larger Montmains premier cru on the left bank of the Serein, and the domaine's vines here are a direct continuation of those that make its Montmains cuvée, planted at the same time. What separates them is position and soil: this parcel lies a little higher on the slope, on complex ground marked by exogyra virgula, the small comma-shaped oyster fossil that gives Kimmeridgian Chablis its signature. In the family's reading that produces a straighter, spicier, chalkier wine than the rounder Montmains, which is why the two are now kept apart. Maturation is split between temperature-controlled tank and barrel, giving a touch more breadth than the village wines without any obvious oak character, and the wine keeps the intensity and fine-boned finish that mark the house style.
Drinking well from release and likely to improve over five to eight years. Serve at 10-12°C with oysters, scallops or a dressed crab salad.
