Description

Bessin-Tremblay Chablis is the domaine's classique bottling, drawn from parcels around the northern commune of La Chapelle-Vaupelteigne.

Chablis lies well north of the Côte d'Or, and its Kimmeridgian limestone, full of fossilised oyster shell, is what gives the wine its distinctive saline cut. La Chapelle-Vaupelteigne is a small commune at the northern edge of the appellation, near Maligny, where the cooler setting tends to produce particularly taut wine. This is the estate's straight Chablis, as distinct from the Vieilles Vignes cuvée, and it is harvested from an assortment of younger-vine parcels scattered around the commune. A good slug of older material is also in the blend, from vines planted between 1950 and 1976, which fills out the middle. The style is unadorned and direct, with the citrus drive and chalky finish that make village Chablis such a useful wine at the table.

Drink over the next three or four years. Serve at 10-12°C with oysters, grilled prawns or a plain green salad with goat's cheese.
