Description

Bessin Tremblay Chablis Vieilles Vignes is the domaine's flagship village wine, blended from six parcels of its oldest vines at La Chapelle-Vaupelteigne.

Chablis lies well north of the rest of Burgundy, and its Kimmeridgian marl, full of fossilised oyster shells, is the source of the saline, taut style that has made the name. This cuvée is drawn from three hectares on the steep slopes opposite the Fourchaume Premier Cru, in the commune of La Chapelle-Vaupelteigne, where the Bessin family have long been based. The blend brings together six parcels of the domaine's oldest village-level vines, the bulk of them planted between 1950 and 1974, across both Kimmeridgian marl and the shallower Portlandian soils above, with a range of exposures. The grapes were whole-bunch pressed and fermented with wild yeasts, then aged for eighteen months in temperature-controlled tank with a small amount of neutral oak involved. Vine age gives the wine its depth without blunting its edge.

Drinking now and good for six to eight years. Serve at 10-12°C with oysters, grilled prawns or a plate of cured salmon.
