Bessin-Tremblay Chablis Vieilles Vignes is the domaine's flagship village bottling, drawn from six parcels of its oldest vines on the slopes facing Fourchaume.
Chablis sits at the northern limit of Burgundy, where Chardonnay ripens slowly on the fossil-rich marls laid down in the Kimmeridgian. The three hectares behind this cuvée are all in La Chapelle-Vaupelteigne, the domaine's home village, on steep ground opposite the Fourchaume premier cru. The six parcels were planted between 1950 and 1974 and take in both Kimmeridgian marl and the lighter Portlandian soils above, across a range of exposures, which is a large part of why the blend carries more weight than a straight village wine. The grapes are pressed as whole bunches and fermented on indigenous yeasts, and the wine spends 18 months in temperature-controlled tank with a small proportion in neutral oak, so texture comes from time on lees rather than from new wood.
Ready to drink now and capable of five or six years in bottle. Serve at 10-12°C with oysters, grilled prawns or a young goat's cheese.
