Description

BiancaVigna Sui Lieviti is a Prosecco refermented in bottle and left on its lees, undisgorged.

Sui lieviti means on the lees, and the style is the old farmhouse method of the Veneto: the wine finishes its second fermentation in bottle and is never disgorged, so it stays cloudy, bone dry and savoury, nothing like the clean commercial Prosecco most people know. Brut Nature means no sugar is added. The estate works the Conegliano hills.

Serve at 8 degrees with salumi, fried food or grilled fish. Stand the bottle upright before opening and drink young.
