Vegan Grilled Eggplant Steaks with Tomato-Basil Salsa
Ingredients:
- 2 large eggplants, sliced into 1cm thick steaks
- 2 tbsp olive oil, plus extra for drizzling
- Salt and pepper, to taste
- 4 ripe tomatoes, diced
- 1 small red onion, finely chopped
- 2 garlic cloves, minced
- A handful of fresh basil leaves, roughly chopped
- 1 tbsp balsamic vinegar
- Optional: a squeeze of lemon juice
Instructions:
- Preheat a grill or grill pan over medium-high heat. Brush the eggplant steaks with olive oil and season with salt and pepper.
- Grill the eggplant steaks for about 4–5 minutes per side until tender and nicely charred. Remove and set aside.
- In a bowl, combine the diced tomatoes, chopped red onion, minced garlic, and fresh basil. Drizzle with balsamic vinegar and a little olive oil, and season with salt, pepper, and a squeeze of lemon juice if desired. Mix gently to combine.
- Plate the grilled eggplant steaks and spoon the tomato-basil salsa generously over the top.
- Garnish with additional fresh basil, and serve immediately.
