Vegan Grilled Eggplant Steaks with Tomato-Basil Salsa

Ingredients:

  • 2 large eggplants, sliced into 1cm thick steaks
  • 2 tbsp olive oil, plus extra for drizzling
  • Salt and pepper, to taste
  • 4 ripe tomatoes, diced
  • 1 small red onion, finely chopped
  • 2 garlic cloves, minced
  • A handful of fresh basil leaves, roughly chopped
  • 1 tbsp balsamic vinegar
  • Optional: a squeeze of lemon juice

Instructions:

  1. Preheat a grill or grill pan over medium-high heat. Brush the eggplant steaks with olive oil and season with salt and pepper.
  2. Grill the eggplant steaks for about 4–5 minutes per side until tender and nicely charred. Remove and set aside.
  3. In a bowl, combine the diced tomatoes, chopped red onion, minced garlic, and fresh basil. Drizzle with balsamic vinegar and a little olive oil, and season with salt, pepper, and a squeeze of lemon juice if desired. Mix gently to combine.
  4. Plate the grilled eggplant steaks and spoon the tomato-basil salsa generously over the top.
  5. Garnish with additional fresh basil, and serve immediately.
