- 400g mixed wild mushrooms (such as cremini, shiitake, and oyster), roughly sliced
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 400g diced tomatoes (canned or fresh)
- 1 cup vegetable broth
- 1 tsp dried thyme
- 1 bay leaf
- 2 tbsp olive oil
- Salt and pepper, to taste
- For the Polenta:
- 1 cup polenta (coarse cornmeal)
- 4 cups water or vegetable broth
- A pinch of salt
- 1 tbsp olive oil (optional)
- Fresh parsley, chopped (for garnish)
- Fresh basil, chopped (for garnish)
Instructions:
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic; sauté until softened, about 3 minutes.
- Add the diced carrots and celery, and cook for another 5 minutes until they begin to soften.
- Stir in the wild mushrooms and dried thyme. Cook until the mushrooms release their moisture and begin to brown, about 8 minutes.
- Add the diced tomatoes, vegetable broth, and bay leaf. Bring to a simmer and let it cook for 15–20 minutes until the flavors meld. Season with salt and pepper, then remove the bay leaf and stir in fresh basil.
- Meanwhile, in a separate saucepan, bring the water or vegetable broth to a boil with a pinch of salt. Gradually whisk in the polenta, reduce the heat, and simmer for 20–25 minutes until the polenta is creamy and fluffy. Stir in olive oil if desired, and garnish with chopped parsley.
- To serve, spoon a generous portion of herbed polenta onto each plate and top with a hearty serving of the wild mushroom ragout. Garnish with additional fresh basil.
