  3. Stir in the diced tomatoes, dried oregano, and dried basil. Bring the mixture to a simmer and let it cook for 15–20 minutes until the eggplant is tender and the flavors meld. Season with salt and pepper to taste.
  4. Remove from heat and stir in freshly chopped basil.
