Vegan Butternut Squash Risotto with Sage and Toasted Almonds
Ingredients:
- 1 small butternut squash, peeled and diced into 1cm cubes
- 1 1/2 cups Arborio rice
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 4 cups vegetable broth, kept warm
- 1/2 cup organic white wine (optional; can substitute with extra broth)
- 1 tbsp olive oil
- 1/2 tsp dried sage (or 1 tbsp fresh sage, chopped)
- 1/3 cup toasted almonds, roughly chopped
- Salt and pepper, to taste
- Fresh sage leaves, for garnish
Instructions:
- In a large saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened, about 3 minutes.
- Add the diced butternut squash and continue to cook for another 5 minutes until it begins to soften.
- Stir in the Arborio rice and cook for 1–2 minutes until the grains are well-coated with oil.
- If using white wine, add it now and stir until the liquid is mostly absorbed.
- Begin adding the warm vegetable broth, one ladle at a time, stirring continuously. Allow the rice to absorb each addition before adding the next. Continue this process for 18–20 minutes until the rice is creamy and al dente, and the squash is tender.
- Stir in the dried sage (or fresh chopped sage) and toasted almonds. Adjust seasoning with salt and pepper to taste.
- Remove from heat and spoon the risotto into bowls. Garnish with additional fresh sage leaves.
