Vegan Braised Eggplant with Tomato and Basil
Ingredients:
- 1 large eggplant, cubed
- 2 tbsp olive oil
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 400g diced tomatoes (canned or fresh)
- 1 red bell pepper, diced
- 1 tsp dried oregano
- Salt and pepper, to taste
- Fresh basil, chopped (for garnish)
Instructions:
- Preheat your oven to 200°C. Toss the cubed eggplant with 1 tbsp olive oil, a pinch of salt, and pepper, then spread it on a baking sheet. Roast for about 20 minutes until tender and lightly caramelized.
- In a large saucepan, heat the remaining olive oil over medium heat. Add the chopped onion and garlic; sauté until softened, about 3 minutes.
- Add the diced red bell pepper and cook for another 3 minutes.
- Stir in the diced tomatoes and dried oregano, then add the roasted eggplant. Let the mixture simmer for 15 minutes until the flavors meld and the sauce thickens slightly.
- Season with salt and pepper to taste, then stir in the fresh basil just before serving.
