Description
Camille Giroud Pommard Les Cras is grown between 280 and 320 metres on ground facing east to south-east.
Pommard has a name for the sturdiest reds in the Côte de Beaune, and this bottling does nothing to argue with it. The team sorts twice, de-stems in full, keeps must sulphur to a minimum and ferments on ambient yeast in open vats for as long as twenty-five days. Eighteen months in barrel with fifteen per cent new oak come next.
Sturdy and dark, with plum, iron and a tannic backbone that repays a few years in the cellar. Decant and serve at 17°C with slow-cooked beef, game pie or a mature washed-rind.
