Vegan Mushroom Bourguignon
Ingredients:
- 400g mixed mushrooms (such as cremini, shiitake, and oyster), roughly sliced
- 1 large onion, finely chopped
- 3 garlic cloves, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 cup dry red wine (a light Burgundy Pinot Noir works well)
- 1 cup vegetable broth
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 bay leaf
- 2 tbsp olive oil
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic and sauté until softened, about 3 minutes.
- Add the diced carrots and celery and cook for another 5 minutes until slightly tender.
- Stir in the mixed mushrooms and dried thyme, and cook for about 8 minutes until the mushrooms release their moisture and begin to brown.
- Mix in the tomato paste, then pour in the red wine and vegetable broth. Add the bay leaf, season with salt and pepper, and bring the mixture to a simmer.
- Allow the stew to simmer gently for 20–25 minutes until the flavors meld and the sauce thickens slightly. Remove the bay leaf.
- Adjust seasoning if needed, and stir in fresh chopped parsley just before serving.
- Plate the mushroom bourguignon and enjoy it alongside a chilled glass of Camille Giroud Volnay 2021 for a harmonious, terroir-driven pairing.
