Description
This wine is made from Viognier and Chardonnay grown in the commune of San Lorenzo on white calcareous soils. The grapes are destemmed and crushed into concrete after a short period on skins. After fermentation the wine is rested for six months before a light filtration and bottling.
Their philosophy is simple: absolute respect for the earth. The climate in Sicily works to their advantage in making wine with as little intervention as possible. Their modern approach is combined with traditional winemaking techniques such as concrete tanks, drying grapes out in the sun and extended skin maceration for the white wines.
