Castello della Sala Bramìto della Sala Chardonnay 2025

Castello della Sala Bramìto della Sala Chardonnay is the younger sibling of Cervaro, an Umbrian Chardonnay made for earlier drinking.

Surrounding a medieval castle a short drive from Orvieto, the Antinori family's Umbrian property has become their home for white wine. Chardonnay grows here at 220 to 470 metres on ground formed from ancient marine deposits, full of fossils and streaked with clay, which brings a mineral edge to the wines. Bramìto was first made in 1994. After a brief cold soak on skins, part of the juice ferments in oak and part in stainless steel at cool temperatures, and only the oak-fermented portion goes through malolactic fermentation. Blending the two gives a wine with some roundness and texture from the barrel and plenty of freshness from the tank.

Chill it well, to around 10 degrees, and serve with grilled prawns, roast chicken, creamy pasta, soft cheeses or a vegetable risotto. Sealed under screw cap, it is ready to enjoy now and over the next three or four years.
