Castello della Sala Conte della Vipera 2023

Castello della Sala Conte della Vipera is an Umbrian white built on Sauvignon Blanc with Semillon, in the manner of white Bordeaux rather than of central Italy.

The Castello della Sala estate sits in the hills near Orvieto and has belonged to the Antinori family since 1940, its castle dating from the middle of the fourteenth century. Alongside the Chardonnay that made the property famous, the estate planted Sauvignon Blanc and Semillon, the classic pairing of the Graves, on soils of clay and marine sediment at some altitude. The wine takes its name from the Monaldeschi della Vipera, the family who built the castle and carried a serpent on their arms. It is largely fermented in stainless steel, with a portion given time in oak, and ages considerably better than most Italian Sauvignon. Both varieties were rare in Umbria when they were first planted here.

Serve chilled alongside shellfish, salads, grilled white fish or a plate of asparagus.
