Vigna Scot is Cavallotto's single-vineyard Dolcetto, grown inside the Monprivato cru at Castiglione Falletto.
Dolcetto d'Alba is usually the everyday wine of the Langhe, raised in stainless steel and drunk within a year or two, but Cavallotto treats it with the seriousness it gives its Nebbiolo. Vigna Scot comes from 2.3 hectares of thirty-year-old vines within Monprivato, on the east-facing and therefore cooler, later-ripening side of that celebrated vineyard. Mature vines, low yields, traditional winemaking and the great calcareous soils of Castiglione Falletto give a Dolcetto with more layer and depth than the variety usually musters. Rather than steel, the family ferments and raises the wine in cement tank and 5,000-litre Slavonian botti, which polishes the tannins and helps avoid the reduction Dolcetto is prone to. What emerges is juicy and mouth-watering, with vibrant cherry fruit and spice framed by polished tannin, and it is a Dolcetto that tends to appeal to Nebbiolo drinkers.
Open now while it is fresh, though it will hold for a few years. Serve at 16°C with salumi, tajarin with ragu or a mushroom pizza.
