Cavallotto Dolcetto D'Alba Vigna Scot DOC 2015

Cavallotto's Dolcetto d'Alba Vigna Scot comes from a single parcel on the hillside between Bricco Boschis and the Monprivato and Codana vineyards at Castiglione Falletto.

Dolcetto d'Alba takes in the Langhe hills around Alba, where Dolcetto ripens weeks ahead of Nebbiolo and is planted on the sites that suit its early cycle. Cavallotto dates from 1928, when Giacomo Cavallotto bought the Boschis property; the second generation began vinifying its own fruit in 1948, and the fourth, Alfio, Giuseppe and Laura, runs the estate today. The twenty-three hectares form one continuous block around the house on top of Bricco Boschis at close to 300 metres, with the Vignolo cru added in 1989, and all of it is farmed organically and picked from the family's own vines. Vigna Scot is pure Dolcetto. It ferments with indigenous yeasts and macerates under a submerged cap for three to four days, then spends six months in 50-hectolitre Slavonian oak botti and a further six in cement before bottling, with no small oak at any point.

It is ready on release and holds for around five years. Serve at 16°C with salumi, tajarin with ragù or a mushroom risotto.
