Description

Cellier Saint Benoit Côte de Feule Ploussard comes from 1961 vines in the vineyard that serves as Pupillin's de facto grand cru.

Côte de Feule is the most renowned site in Pupillin, lying in the heart of the appellation on a south-facing slope at 390 metres. It was once a stone quarry, and Benjamin Benoit farms 0.4 hectares of old Ploussard here, the local Pupillin name for Poulsard, rooted in steep, iris-coloured Triassic soils littered with limestone gravel. The vines were planted in 1961. All of his Ploussards are made from mostly hand-destemmed fruit, with only about 5 per cent of the ripest stems retained; this cuvée ferments spontaneously in a large wooden tronconique cask and then spends 12 months in tank. Poulsard is a thin-skinned variety that gives pale, translucent reds, and of the domaine's three bottlings this is the most immediately inviting.

Ready now and good for several years; Benjamin suggests opening it an hour ahead and using a large glass. Serve cool, at 14–16°C, with charcuterie, roast chicken or grilled trout.
