Cellier Saint Benoit Arbois Pupillin Viandris Ploussard 2023

Viandris holds this grower's oldest Ploussard vines, now approaching seventy years, under the hilltop village of Pupillin.

The site lies in the north of the appellation, with Benoit also farming Chardonnay near the top where there is more Bajocian limestone. The Ploussard vines are rooted in deep grey marl from the middle Liassic on a slope of 20 to 30%, steep by Burgundian standards if mild by those of the Jura. Natural springs run beneath the site and keep the soils humid, and that moisture, combined with old vines and low yields, gives this wine more density of flesh and tannin than Benoit's other Ploussards. Poulsard, called Ploussard in Pupillin, is a pale, thin-skinned variety that rarely makes a dark or heavy wine, so density here is a matter of texture rather than weight. The cuvée is bottled from a single 600-litre barrel and carries a distinctly ferrous character.

Drink over the next five or six years, lightly chilled at 14-15°C, with charcuterie, roast poultry or grilled trout.
