- Salt and pepper, to taste
- For the Citrus Aioli:
– ½ cup mayonnaise
– 1 tbsp lemon juice
– 1 tsp orange zest
– 1 small garlic clove, minced
– Salt and pepper, to taste

- Poach the prawns: In a large pot, combine water (or stock), lemon slices, bay leaf, and a pinch of salt and pepper. Bring to a gentle simmer over medium heat.
