Duck Breast with Berry Reduction

Ingredients:

  • 2 duck breasts (about 300g each)
  • 1 cup mixed berries (e.g., raspberries, blackberries)
  • ¼ cup sugar (adjust to taste)
  • ¼ cup water
  • Salt and pepper, to taste
  • Optional: 1 tbsp balsamic vinegar for extra depth

Instructions:

  1. Score the skin: Using a sharp knife, lightly cut crosshatches into the duck skin, being careful not to slice into the meat. Season both sides with salt and pepper.
  2. Sear the duck: Place the breasts skin-side down in a cold pan over medium heat. Render the fat and crisp the skin for about 6–8 minutes. Flip and cook the flesh side for 3–4 minutes or until your desired doneness.
  3. Rest the duck: Remove from the heat, cover loosely with foil, and let it rest for 5 minutes before slicing.
  4. Berry reduction: Meanwhile, in a small saucepan, combine berries, sugar, and water. Simmer over medium-low heat until the mixture thickens slightly. Stir in balsamic vinegar if desired, and adjust sweetness or acidity to taste.
  5. Plate: Thinly slice the duck and drizzle the berry reduction on top.
