Duck Breast with Berry Reduction
Ingredients:
- 2 duck breasts (about 300g each)
- 1 cup mixed berries (e.g., raspberries, blackberries)
- ¼ cup sugar (adjust to taste)
- ¼ cup water
- Salt and pepper, to taste
- Optional: 1 tbsp balsamic vinegar for extra depth
Instructions:
- Score the skin: Using a sharp knife, lightly cut crosshatches into the duck skin, being careful not to slice into the meat. Season both sides with salt and pepper.
- Sear the duck: Place the breasts skin-side down in a cold pan over medium heat. Render the fat and crisp the skin for about 6–8 minutes. Flip and cook the flesh side for 3–4 minutes or until your desired doneness.
- Rest the duck: Remove from the heat, cover loosely with foil, and let it rest for 5 minutes before slicing.
- Berry reduction: Meanwhile, in a small saucepan, combine berries, sugar, and water. Simmer over medium-low heat until the mixture thickens slightly. Stir in balsamic vinegar if desired, and adjust sweetness or acidity to taste.
- Plate: Thinly slice the duck and drizzle the berry reduction on top.
- Enjoy with a chilled glass of Champagne Dosnon Dosnon Noirs 1.5L Magnum NV for a refined and harmonious pairing.
