Description
Champagne Jacques Selosse Substance is drawn from a perpetual blend of Avize Chardonnay that has been running since 1986.
Anselme Selosse describes the aim as purging the wine of the organic so that only the mineral is left behind. The fruit comes from two organically farmed sites in the grand cru of Avize: Les Marvillannes, facing south, and Les Chantereines, facing east. Rather than fix a single year, the solera carries a fraction of every vintage since it was started, so the wine expresses the place through time instead of the conditions of one season, which is the exact inverse of the estate's Millésime. Each release spends five to six years on lees and is bottled with a dosage of between zero and 2 g/L. Fermentation and ageing are in oak casks, as across the range. This bottling draws on the 1986 to 2016 solera with a 2016 base and was disgorged in February 2024.
Complex and developed on release, and capable of many years yet. Serve at around 8°C with roast poultry, wild mushrooms or a mature Comté.
