Champagne Laherte Frères Blanc de Blancs in magnum is an all-Chardonnay Champagne built on a single base year with a reserve component.
Laherte Frères farms some seventy-five parcels out of Chavot, south of Épernay, and Aurélien Laherte assembles this blanc de blancs from Chardonnay grown on the chalk of the Coteaux Sud d'Épernay and the Côte des Blancs. Each parcel is pressed and fermented separately, largely in used oak, with indigenous yeasts and no filtration before bottling. A portion of reserve wine, kept in a perpetual blend, is added to give continuity from year to year. The wine is then aged on lees in bottle and disgorged with a low dosage, with the base year and disgorgement date declared on the label. In magnum the wine ages more slowly, which generally means a fresher, more slowly evolving Champagne.
Good now and better still with a few years in the cellar. Serve at around 8°C with oysters, grilled prawns or a plate of hard cheese.
