Champagne Laherte Frères Blanc de Blancs Brut Nature is pure Chardonnay from the family's chalkiest biodynamic sites in Chavot and Épernay, in double magnum.

The Laherte family has grown vines around Chavot, on the edge of the Côte des Blancs, since 1889, and Aurélien Laherte has taken the estate to biodynamic farming across its many small parcels. The sites behind this cuvée are the chalkiest they hold, on chalk and chalky clay marl with pockets of flint and schist. The chalk drives the racy, saline line that defines the wine, while the clay supplies the fruit weight and texture that keeps it from being austere. The Brut Nature is a blend of two vintages including up to 50 per cent reserve wine, and, as the name says, it is bottled with no dosage at all. Primary fermentation takes place in barrique, foudre and tronconique cask; the wine then rests just over two years in bottle, and, as with everything here, it was disgorged by hand.

Drinking now and rewarding several years more, particularly in this format. Serve at about 8°C with oysters, sashimi or roast chicken.
