Champagne Laherte Frères Blanc de Blancs Brut Nature is all Chardonnay from the family's chalkiest biodynamic parcels at Chavot and Épernay, bottled without dosage.

Laherte Frères works in the Coteaux Sud d'Épernay, a zone better known for Meunier, and this cuvée comes from the chalkiest ground the family holds, at Chavot and Épernay itself. The vineyards are farmed biodynamically, and the soils are rich in chalk and chalky clay with pockets of flint and schist. The chalk drives the racy, saline line of the wine, while the clay supplies weight and texture underneath. The blend covers three vintages and includes up to 40 per cent reserve wine. Primary fermentation takes place in barrique, foudre and tronconique cask, after which the wine spends just over two years in bottle. Like all the house's Champagnes it is disgorged by hand, and as the name says, no dosage is added. This release was disgorged in October 2022 with an extra seven months in bottle.

Ready now and will hold three to five years. Serve at 8°C with oysters, raw kingfish or a goat's cheese tart.
