Description
Ultradition is the entry Champagne of Laherte Frères, a Meunier-led blend drawn from seven parcels across the Coteaux Sud d'Épernay and the Vallée de la Marne.
The fruit is both organically and biodynamically reared. Two reserve vintages now go into the blend and make up 40 per cent of it, with the remaining 60 per cent barrel-aged material. The varietal split holds at 60 per cent Meunier, 30 per cent Chardonnay and 10 per cent Pinot Noir, from parcels at Chavot, Mancy, Morangis, Le Breuil, Boursault, Moussy and Vaudancourt, where the vines average 30 years of age. Aurélien Laherte ferments the juice naturally in a mixture of vessels, including two fifty-hectolitre Rousseau tronconique casks, old barrels, foudre and concrete. Whatever the vessel, the wines stay on lees, and malolactic fermentation is only partly completed, generally around 60 to 70 per cent, which keeps a little more acid tension in the finished blend.
Ready to drink and a sound house Champagne for the cellar door or the table; serve at about 8°C with oysters, fried chicken or a soft cheese.
