Champagne Larmandier-Bernier Latitude Blanc de Blancs is drawn entirely from Chardonnay on the southern side of Vertus, offered here in 1.5-litre magnum.

The name refers to the fact that the source vineyards all sit on roughly the same latitude, and it hints at the breadth of texture these sites give: there is more clay in the soil here than in the pure chalk further north, and the wines carry correspondingly more flesh. In the cellar the family works mostly in large casks, now almost entirely from the Austrian cooper Stockinger. Fermentation and malolactic conversion both run naturally and there is no filtration. Latitude then matures in bottle for more than two years before disgorgement, with dosage kept at extra-brut levels and added at least six months ahead of release. This bottling is based on the 2021 harvest with 40 per cent reserve wine drawn from a perpetual reserve begun in 2004. Coming releases will bring in fruit from vineyards at Villeneuve and Bergères.

Ready now and capable of a decade in magnum. Serve at 8°C with oysters, grilled prawns or a plate of hard cheese.
