Champagne Pascal Agrapart Grand Cru Avizoise Blanc de Blancs comes from old vines on the clay-rich upper slopes of Avize.

Avize is one of the great Chardonnay villages of the Côte des Blancs, and Avizoise draws on two neighbouring sites in the Coteaux d'Avize, Les Robarts and Les Gros Yeux, both now named on the front label. The vines are around 50 to 60 years old. Pascal Agrapart points to the heavier argilo-calcaire soils and the altitude of these plots as the source of the wine's breadth: more texture and roundness than the chalk-dominated parcels lower down. The wine is fermented and aged entirely in 600-litre demi-muid, and the second fermentation takes place under cork rather than crown seal, which slows the exchange in bottle. This release spent just over five years on lees and was dosed at 3 g/L.

Drinking well now and rewarding several years more. Serve at about 8°C in a white wine glass with grilled crayfish, roast chicken or aged gruyère.
