Description
Champagne Pascal Agrapart Expérience is a grand cru blanc de blancs made with no sugar added at any stage, under a special dispensation from the appellation authorities.
In 2002 Pascal Agrapart sought and received permission from the local authorities to make a small quantity of wine without any sugar additions: no chaptalisation, and nothing added for either the second fermentation or the dosage. Using neither sugar nor yeast for the liqueur de tirage is against the appellation rules, hence the request. Instead of sugar, Agrapart uses must from the same vineyards that produced the wine to prompt the bottle fermentation, so the Champagne is entirely the product of estate-grown grapes. The current release is an equal blend from sources that also feed the Avizoise and Minéral cuvées, Les Robarts in Avize and Les Bionnes in Cramant, prompted with around 20 per cent juice from those same vineyards. Production is tiny, and the style is extremely difficult to make, which explains both the rarity and the price.
Drinking now and capable of a decade in bottle. Serve at about 8°C with grilled crayfish, roast chicken or a plate of hard cheese.
