Champagne Pascal Agrapart Grand Cru Minéral Blanc de Blancs is blended from two adjacent old-vine plots straddling the Avize and Cramant boundary.
Agrapart farms in Avize, at the heart of the Côte des Blancs, where the chalk lies close enough to the surface for roots to reach it directly. Minéral comes from two neighbouring vieilles vignes parcels of more than fifty years, one on either side of the line between Avize and Cramant. The fruit from Le Champ Bouton in Avize was fermented in tank while the Les Bionnes component in Cramant went into 600-litre oak casks — barrels for the expression of minerality and tank for precision, as Pascal Agrapart puts it. The wine spent over five years on lees and was disgorged in June 2025 with 3.5 g/L dosage. It is typically the saltiest and most overtly chalky wine in the range, closer in shape to white Burgundy than to most Champagne.
Drinking well now and worth a decade in the cellar. Serve at 8°C, ideally in a white-wine glass, with oysters, grilled fish or roast chicken.
