Champagne Pascal Agrapart's Vénus is a zero-dosage grand cru Blanc de Blancs from a third of a hectare of 1959 vines in the Avize plot La Fosse aux Pourceaux.

Avize sits at the heart of the Côte des Blancs, and La Fosse aux Pourceaux is one of its best-known vineyards. Agrapart's 0.3-hectare section lies on the chalkiest part of the slope near the village, in contrast to the more clay-rich soils behind the Avizoise cuvée. The vines were planted in 1959, making them extremely old by Champagne standards, and the parcel yields only tiny quantities each year. The wine takes its name from Vénus, the Boulonnais mare that first ploughed the site. It is bottled without any dosage. Where Avizoise is a benchmark of the Côte des Blancs, Vénus has more depth, grip and phenolic power, and it holds enough finesse and mineral intensity to match that weight. This is a Champagne that asks for food and repays decanting when young.

Give it two or three years at least. Serve it at the table in a Burgundy glass with roast chicken, turbot or an aged hard cheese, at 8–10°C.
