Les Cintres is a pure Pinot Noir cuvée made only in exceptional years from the oldest, best-exposed plots at the heart of the Clos des Goisses.

The Clos des Goisses rises steeply from the Marne at Mareuil-sur-Aÿ on chalk, facing due south, and is among the warmest sites in Champagne. Within it, the adjoining plots of Les Petits Cintres and Les Grands Cintres are, according to Charles Philipponnat, the oldest and best exposed on the whole hill, home to seventy-year-old mass-selection cuttings of unknown origin. They are known for yielding unusually concentrated fruit. This bottling is made in deliberately small quantities from about a third of the harvest volume, so as not to weaken the classic cuvée. The wine was fermented entirely in barrel and blocked from malolactic fermentation, spent ten years on lees before disgorgement and was finished with a dosage of 4.5 grams per litre, which places it in Extra Brut territory.

Drinking now and capable of a decade or more; serve at around 8°C in a white wine glass with roast poultry, veal or aged comté.
