Champagne Suenen Le Mont-Aigu is a grand cru blanc de blancs from a single parcel of very old, low-yielding vines in Chouilly.

Chouilly sits at the northern end of the Côte des Blancs, and Le Mont-Aigu lies near the Cramant border on the Butte de Saran, one of the village's most highly regarded sites. Suenen makes just a single 600-litre demi-muid of this cuvée each year. The vines are more than 45 years old and carry fanleaf virus, which leaves them with tiny leaves, roots and bunches, and the soils are skeletal, roughly 35 centimetres of topsoil over pure chalk. The combination gives a deep but compact expression of Chouilly, with flesh and concentration set against a chiselled, saline frame. The base wine fermented naturally and spent nine months in one Stockinger barrel, then more than five years in bottle before disgorgement in July 2022. Following the house's usual dosage trial, it was finished at 4 grams per litre.

Drinking now and built to develop over the next eight to ten years. Serve at 8°C with scallops, sashimi or aged comté.
