Château Coutet 1er G.C.C, 1855 2015

Château Coutet 1er G.C.C, 1855 is a Premier Cru Classé of Barsac, made on the limestone plateau at the northern edge of the Sauternes zone.

The estate is among the oldest in the district, built around a medieval tower that survives from the centuries when Aquitaine was held by the English crown. Barsac has its own appellation within Sauternes, and its shallow soils over limestone give sweet wines with a firmer line than those grown on the gravel further upriver. Where the cold waters of the Ciron meet the warmer Garonne, autumn fog forms and settles in the vineyards, encouraging botrytis cinerea, the noble rot; pickers then move through the rows repeatedly over several weeks, taking only berries that have shrivelled. Sémillon leads the blend, with Sauvignon Blanc and a little Muscadelle, and fermentation and ageing take place in barrel.

It is a classic match for foie gras, Roquefort and fruit desserts, and holds its own beside a mildly spiced dish; serve it thoroughly chilled.
