Description
Château d'Yquem 1er Grand Cru Classé Supérieur en 1855 holds a rank of its own at the top of the 1855 classification, shared with no other estate in Bordeaux.
Yquem sits on a rise of gravel and clay above the Ciron valley, high enough that water drains away from the whole property through an extensive network of clay pipes laid beneath the vines in the nineteenth century. Mists form where the cold Ciron meets the warmer Garonne and bring botrytis cinerea, the noble rot; pickers then pass through the vineyard many times across the autumn, sometimes over several weeks, taking only berries shrivelled enough to have concentrated their sugar. Yields are famously small. The wine is aged in new oak for an unusually long period, and in vintages judged unworthy nothing at all is released under the château name.
Serve it well chilled, traditionally with foie gras or Roquefort; and both keep for decades.
