Description
Château de Fargues Sauternes is a sweet white from a ruined medieval fortress at the southern end of the appellation, held by the same family since the fifteenth century.
Fargues sits at the southern edge of the Sauternes appellation, on the grounds of a fortified castle held by the Lur Saluces family since 1472, the same family long associated with Chateau d'Yquem. The estate was not included in the 1855 classification, yet it has built a formidable reputation on its own terms. Production is very small, the harvest is carried out in successive passes through the vineyard picking only berries affected by botrytis, and the wine is fermented and aged in barrel for several years before release. The blend is led by Semillon with Sauvignon Blanc in support, the classic Sauternes pairing.
Serve well chilled at around 8 to 10 degrees with blue cheese, foie gras or a simple fruit tart; well kept bottles last for decades.
