Recipe

Slow-Roasted Lamb Shank with Red Wine Reduction

Ingredients:

  • 2 lamb shanks (about 1kg total)
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 4 garlic cloves, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 375mL Château De Haute-Serre Cahors 2018 (or a portion thereof)
  • 2 cups beef or vegetable stock
  • 2 tbsp tomato paste
  • 1 sprig rosemary
  • 2 sprigs thyme
  • 1 bay leaf

Instructions:

  1. Preheat your oven to 160°C.
  2. Season the lamb shanks generously with salt and pepper. Heat the olive oil in a heavy, ovenproof pot over medium-high heat and sear the shanks on all sides until well-browned. Remove and set aside.
  3. Add the chopped onion, garlic, carrots, and celery to the pot and sauté until softened, about 5 minutes.
  4. Stir in the tomato paste and cook for 2 minutes.
  5. Return the lamb shanks to the pot and add the red wine, stock, rosemary, thyme, and bay leaf. Bring to a simmer.
  6. Cover the pot and transfer to the preheated oven. Roast slowly for 3–4 hours until the lamb is tender and the sauce has thickened into a rich reduction.
  7. Remove the shanks and strain the sauce. Adjust seasoning with salt and pepper.
  8. Plate the lamb shanks, drizzle with the red wine reduction, and garnish with fresh herbs. Serve immediately.
