Description
This is an aged Marc de Bandol, a grape spirit distilled from the pressed Mourvèdre pomace of Château de Pibarnon and matured for twenty years in cask.
Bandol, on the Mediterranean coast east of Marseille, is Mourvèdre country, and Château de Pibarnon is one of its leading estates, farming terraced clay and limestone above the village of La Cadière-d'Azur. Éric de Saint-Victor continues a family tradition of making a marc in the years that warrant it. The spirit is distilled by the méthode Bourguignonne from the pomace left after pressing, using a small wood-fired copper still; only the heart of the run is kept, and each pass yields about 25 litres. It then spends twenty years in old 418-litre Armagnac casks made from the Chêne Rouvre oak of that region, and is bottled unfiltered. Two decades of cask has left a deep, finely drawn spirit, opulently textured, with raisin, plum and prune, a touch of liquorice and a long, expansive finish. It comes in a wooden presentation box.
Ready to drink and will keep indefinitely once opened. Serve at room temperature in a small glass after dinner, with dark chocolate or a plate of dried fruit and nuts.
