Panisse Provençale (Chickpea Fritters)
Ingredients:
- 250g chickpea flour
- 750mL water
- 2 tbsp olive oil
- 1 garlic clove, minced
- Salt and pepper, to taste
- Fresh rosemary or thyme (optional)
- Oil for frying
Instructions:
- In a saucepan, whisk chickpea flour into water. Add olive oil, garlic, salt, and pepper.
- Cook over low heat, stirring constantly until thickened, about 10–15 minutes.
- Pour into a greased dish and smooth surface. Chill until firm, then cut into fingers.
- Heat oil in a pan and fry pieces until golden and crisp on all sides.
- Serve hot with sea salt and a glass of Château De Roquefort 'Corail' Rosé for a Provençal apéritif experience.
