Recipe

Panisse Provençale (Chickpea Fritters)

Ingredients:

  • 250g chickpea flour
  • 750mL water
  • 2 tbsp olive oil
  • 1 garlic clove, minced
  • Salt and pepper, to taste
  • Fresh rosemary or thyme (optional)
  • Oil for frying

Instructions:

  1. In a saucepan, whisk chickpea flour into water. Add olive oil, garlic, salt, and pepper.
  2. Cook over low heat, stirring constantly until thickened, about 10–15 minutes.
  3. Pour into a greased dish and smooth surface. Chill until firm, then cut into fingers.
  4. Heat oil in a pan and fry pieces until golden and crisp on all sides.
  5. Serve hot with sea salt and a glass of Château De Roquefort 'Corail' Rosé for a Provençal apéritif experience.
