Chateau Doisy Daëne L'Extravagant de Doisy-Daëne is a rare sweet white from Barsac, made only in the smallest of quantities.

Doisy-Daëne is a classified growth of Barsac, the commune within Sauternes entitled to use either name, where flat limestone terrain and the cold waters of the Ciron encourage the autumn mists that bring botrytis. The property was long directed by Denis Dubourdieu, the Bordeaux oenologist whose work on white winemaking reshaped the region, and it remains with his family. L'Extravagant is the estate's special cuvée, made from a severe selection of the most concentrated botrytised berries and matured in new oak. It is produced only when the harvest allows, and never in volume, which is why it is so seldom seen. Picking for a wine of this kind is done in successive passes through the rows.

And is best served well chilled with blue cheese, fruit desserts, or on its own after a meal.
